Oven roasted homefries – yummmm…

While my blog is mostly knitting related, I will throw in a recipe here or there when I feel compelled to do so.

I couldn’t help but post this quick and easy recipe for awesome oven roasted homefries:

What you need:

– A bag of baby potatoes
– 4 Tbsp Garlic Garlic seasonings by Tastefully Simple (or any dried garlic season mixture equivalent)
– 2 Tbsp EVOO (Extra Virgin Olive Oil)
– Sea Salt (I use a grinder)
– Black Pepper (I use a grinder)


I just chopped up my potatoes in halves or quarters to make little homefry type potatoes. I placed those in a gallon size ziplock bag and in the bag went a couple tablespoons of EVOO, about 4 tablespoons of Garlic Garlic seasoning which is AMAZING!!, sea salt, and black pepper. I sealed up the bag and swished it all around and I let the flavors marinate in the fridge for about 35 mins. Then I put the potatoes in a 9×12 glass casserole dish in a gas oven at 375 degrees. Baking time depends on how crunchy/crisp you like your homefries. I set my timer for 45 minutes. While you wait for them to bake, sit back (and knit) and enjoy the delicious aroma!!
