Today was a beautiful day spent with family and friends. I am so thankful to God for everything he’s blessed me with in my life- trials and all. He’s made me such a strong person. I owe everything to Him.
I had some time today to make some delicious Pumpkin Chocolate Chip Cookies. They came out great. I found a similar recipe on my All Recipes app.
1 1/2 cups butter, softened
2 cups packed brown sugar
1 cup white sugar
1 (15 ounce) can pumpkin puree
1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 cups miniature chocolate chips
Preheat oven to 375 degrees F (190 degrees C).
Beat butter, brown sugar, and white sugar together in a bowl until creamy. Add pumpkin, egg, and vanilla extract; beat until smooth.
Mix flour, cinnamon, baking soda, baking powder, and salt in a separate bowl; stir into creamed butter until combined. Fold chocolate chips into batter. Drop 1 to 2 tablespoons batter for each cookie onto a baking sheet.
Bake in the preheated oven until the edges of each cookie are lightly browned, 10 to 12 minutes.
So my Puerperium Cardigan was coming along great…until I decided to count my stitches and had 14 extra stitches than there should have been. Of course I had to frog it and I frogged the whole thing. I was just finished with the chest before I frogged it so I was on my way. But I’m glad I ripped it all out to start over. I’m almost back to that spot.
I hope to have a progress picture of it within the next day.
